Dale Pinnock Recipe - May

Dale Pinnock’s recipe for steak with crushed peas, green beans, feta cheese, and courgettes.

INGREDIENTS

  • 1 large courgette
  • 200g garden peas
  • 100g feta cheese
  • 100g green beans
  • 1 sirloin steak

DIRECTIONS

  1. Start off by prepping the courgette, by washing it and chopping it into thin strips. You can either use a chopping knife or a vegetable peeler.
  2. Simmer the garden peas (fresh or frozen) until they are soft enough to mash easily.
  3. Simmer the green beans until cooked.
  4. Dab some oil straight onto the steak and add a little pepper and salt.
  5. Place the steak on the grill and turn when necessary.
  6. Lightly fry the courgette strips in a little olive oil and cook them until the point they’re soft and starting to brown on the edges.
  7. Once the peas are cooked (don’t overcook) take off the boil and drain. Using a masher, crush in a bowl.
  8. Add the cooked courgettes and green beans to the bowl of crushed peas.
  9. Crumble in the feta cheese.
  10. Add cracked black pepper, crystal salt and a little lemon juice.
  11. Slice the steak and serve on top of the vegetable medley.
