Dale Pinnock Recipe - June

In this recipe tutorial, Dale Pinnock talks us through how to make Bean and Corn Quesadillas, a tasty yet nutritious snack that’s easy to make at home. By using mixed beans as the main ingredient, and wholewheat tortillas, you are introducing plenty of fibre into your diet. Fibre is great for supporting digestive and cardiovascular health.

This is a great recipe to whip up quickly when you’re in a rush or for when you just can’t be bothered to cook a big dinner. The ingredients are affordable and include items that you’re likely to already have in your kitchen cupboards.

Dale Pinnock, also known as The Medicinal Chef, is well-known for his nutritional recipes that make healthy eating enjoyable and easy to manage.

INGREDIENTS

  • 200g tinned mixed beans
  • 2tbsp sweetcorn
  • 2 wholewheat tortillas
  • ½ small chilli, finely chopped
  • 2-3 handfuls of grated cheddar cheese
  • Coriander, roughly chopped

DIRECTIONS

  1. Preheat the oven
  2. Empty the tin of mixed beans into a bowl
  3. Mash the beans coarsely
  4. Spoon the bean mix onto the wholewheat tortillas
  5. Put pressure on the beans to make sure that they stick to the tortilla so they hold their shape
  6. Season with sea salt and black pepper
  7. Sprinkle on some grated cheese, sweetcorn and chopped chilli
  8. Add more cheese on the top
  9. Add coriander
  10. Add a second tortilla on top and press down
  11. Put in the oven for 10 – 15 minutes
  12. Remove from the oven when the cheese has melted and the top tortilla is starting to brown
